Considering the small size of the boat the price difference between epoxy and polyester will be relatively small along with the benefits it offers, I have decided to go with the epoxy.
Which brings me on to a couple of questions:
Can anyone recommend a good epoxy?
What filler should I use?

I plan on building a small motor canoe which is a proximate 13ft using the stitch and glue method however I am unsure as to if I should use epoxy resin or polyester resin.
